The starting point

What's special: 100% Espadín agave from Oaxaca's central valleys, fermentation in wooden vats, and double distillation in copper. It's the mezcal to make you fall in love with mezcal.

The Rebel with a Cause
Character: Intense, mineral, with mountain character.
Flavor: Herbaceous and earthy entry. Evolves to grapefruit peel, white pepper, and a more pronounced smokiness than the Joven. Long and dry finish.
What makes it special: Espadín agave grown on an Oaxacan hillside. It takes 7-8 years to mature, and it shows. For those who already know Espadín and are looking for more altitude.
The Perfect Match
Character: Balanced and complex. The bridge between agaves.
Flavor: The Espadín brings sweetness and body. The Tobalá adds floral notes, mint, ripe fruit, and a fine spice reminiscent of cinnamon. Integrated smoke, not aggressive.
What makes it special: Distilled together, not blended. It's chemistry, not arithmetic. Ideal for gifting when you're not sure if they prefer sweet or complex.
The King of Wild Agaves
Character: Elegant, fruity, almost silky.
Flavor: Mango, ripe banana, mint, orange blossom, and soft leather. Zero harshness. A mezcal to be sipped neat, that makes you close your eyes.
What makes it special: Wild Tobalá agave, 8-12 years old. Grows in the shade on cliffs.
Very low yield: you need 20 kg of piña for 1 liter. That's why each batch is limited and numbered.
Madrecuishe
The green matriarch
Character: Herbaceous, powerful, medicinal.
Flavor: Green chili, eucalyptus, rosemary, mint, and a deep mineral undertone. Dry wood smoke. Lingering finish with hints of a forest after rain.
What makes it special: Agave Karwinskii, 12-16 years old. The master calls it "the mezcal for conversation." It awakens the palate and sparks discussion. To be savored slowly.
The Wise Man of the Mountain
Character: Wild, spicy, mystical.
Flavor: Star anise, clove, allspice, pine resin, and an elegant spiciness. It is the most complex of the house. Each sip evolves in the mouth.
The Special: Agave Marmorata up to 20 years old. Grows on cliffs at 2,000 meters above sea level.
Minimum yield and maximum flavor. It is a collector's mezcal and a ritualistic mezcal. Not recommended for beginners.
Oaxacan After-Dinner Drink
Character: Sweet, warm, enveloping.
Flavor: High-altitude coffee from the Sierra Sur, dark chocolate, piloncillo (unrefined whole cane sugar), and the smoke of Espadín mezcal embracing everything. Creamy finish.
Special Feature: It's not a "curado" (mezcal infused with fruit). We distill the Espadín with organic coffee beans in the still. It's both dessert and digestif. Order it with an 80% cacao chocolate and you'll understand Oaxaca.
